Why can I do hard things but struggle with everyday stuff?

Hard tasks and everyday tasks ask for different things. A complex project can have a clear goal and strong interest, while a small task can involve ambiguity, switching, memory and lots of tiny decisions.
What this can look like
You may handle a complex work problem for hours but avoid booking an appointment, doing laundry or replying to a simple message. The smaller job may contain more hidden decisions, switching or uncertainty than the big one.
Why it can happen
“Easy” is not a useful category when the task has hidden admin, interruption or uncertainty built into it. Try naming the specific friction: is it starting, remembering, choosing, changing task or stopping? That is more useful than calling yourself inconsistent.

Compare one job you can do with one you avoid. Ask: is the goal clear, is feedback quick, are the steps visible, and how many decisions are hidden? Borrow one helpful feature from the easier task. For example, give the small job a finish line or do it beside someone.
